Pikelets from Australia

About Australia

Australia is a country and a whole continent. The food started out British but changed a lot with immigrants from Europe and Asia. Australians love brunch, and pancakes are a big part of it.

The dish

Pikelets are similar to American pancakes but are sweeter with less butter. American pancakes are fluffier as well. Bluey means that most kids know what these are.

What we thought

There might be more iconic Australian dishes, but you can’t have a child under 10 and not make these. 4.7/5 (everyone loves pancakes).

Ingredients and directions

Ingredients

  • 1 egg
  • 3 tbsp sugar
  • 1 tsp golden syrup (or honey)
  • 1 cup milk
  • 1.5 cups all-purpose flour
  • 3 tsp baking powder
  • 1/4 tsp baking soda
  • 1 pinch of salt
  • 2 tsp butter, melted

Cook and serve

  • Butter
  • Good quality jam
  • 1/2 cup heavy cream combined with 2 tbsp of powdered sugar and whipped to soft peaks (you could also buy a can of whipped cream)

Directions

  1. Mix the sugar, milk, eggs, melted butter, and honey together.
  2. Mix the flour, baking powder, baking soda, and salt together then add it to the sugar/egg mixture. Blend the two but don’t overmix it.
  3. Grease a pan with butter over a low-medium heat.
  4. Add about 2 tbsp of batter to the pan in a circle.
  5. When bubbles appear on the surface of the batter, flip the pancake over. Cook until both sides are a light brown.
  6. Serve with jam and whipped cream.
